It
is super-hot outside and there’s nothing better than the cool cucumber slices
to bring some relief. The Tangy Cucumber and Lettuce Salad Bowl is the right accompaniment in every meal this
summer.
The
sight of it is so refreshing and cooling to the eyes that you feel happy. I am
eating clean this entire April because a. it’s my theme for the month b. I don’t
feel like eating anything spicy or sweet or anything. If I could simply survive
on juices and water I would probably do that now!
We

INGREDIENTS
- Cucumber – 1 sliced
- Iceberg
Lettuce – ½ bunch chopped
- Olive
oil – 1 teaspoon
- Lemon
juice – 2 teaspoon
- Red
Wine Vinegar – 1 teaspoon
- Salt
& Pepper – to taste
- Dried
Oregano – 1 teaspoon
INSTRUCTIONS
- In a mixing bowl place cucumber and lettuce
- Drizzle olive oil, vinegar, lime juice, oregano and seasoning
and mix well.
- In a bowl place the cucumber slices on the sides to form a
ring of cucumbers
- Place the lettuce inside the ring
- Drizzle leftover vinaigrette over the lettuce
- Serve with a toast or enjoy just like that.
TIPS
Slice the cucumber with the skin
Don’t slice too thin – they will not stand on their own
otherwise
